Carrot Apple Cinnamon bread




Hola!
I'm back with the next recipe cos i'm on a baking spree!!
So my mom asked me to bake a bread for her friend and as usual i browsed through pinterest and discovered this super easy recipe! This is by this blog named Averie cooks ! The pictures that was posted was the first thing that caught my attention and i gave in!! I wanted to try it sooner cos it contained all these fancy ingredients like nutmeg,cinnamon,apple,carrot,coconut oil - all these in a BREAD(I HAD TO DO IT)?! Hmmm... That sounded amusing enough for me to go for it. 

Like i mentioned before it is very very easy and it does not even require and fancy-schmancy  whipping or blending or whisking....Just mixing...plain mixing that does'nt take too much of an effort also! That simple procedure!

When i took it from the oven i wanted to dive into it! Hence i did not wait for it to cool down and i just cut the slices while it was too hot already.....Thus the broken pieces... Never mind! It did'nt last that long to even to look at it and regret...but now when i look back at the pictures i slightly regret for hurrying so much(a tiny little regret)!! 

Trust me when i say that the texture of it was like cotton. I had to cut it so carefully making sure not to break the pieces!! It was sooo moist and soft!!! More like the melts-in-your-mouth types!!

For those of you who don't like too much sweet this is the safest bet!! Its not too sweet.....not too bland also! Perfect!!
I tweaked the original recipe according to my convenience!!
You can feel free to add some nuts in this too!!

So...hurry up and pick up a clean bowl!



I added two eggs and mixed them until combined.






Then 3/4 cup of granulated sugar.Next add 2 tsp of vanilla essence.To that add 1/3 cup of coconut oil. If you don't prefer coconut oil then substitute it vegetable oil. Although, the coconut oil will hardly be recognisable in the bread,  not even a trail of it. I reckon its the nutmeg! I told you he's a dangerous guy!!





In goes 2 tbsp of cinnamon and a pinch of nutmeg(This one's too strong,so be careful with this guy- Oh! I'm warning u here!).



Mix 'em all up slowly.





Add 1 cup of flour to that.
Then 1/4 tsp of baking powder and 1/4 tsp of baking soda. A pinch of salt too.




Add 1/4 cup of yogurt.
Now mix everything with a spatula slowly until it is combined. DO NOT OVERMIX.

Ok... I probably should've mentioned this to you earlier. I'm assumsing you'll read the entire post and then start going about with the preparation yourself.

Remember how i asked you to start with a clean bowl....Don't!! Start by grating an apple(3/4 cup) and 3 carrots (3/4 cup). And set it aside at the beginning itself.








So add these two ingredients at the end and just fold them along with the mixture. Just a  few folds until its well incorporated.







The recipe i was following said i'm supposed to have a thick batter... On the contrary mine was runny and thin!! So either ways it turns out good ....Don't you panic like i did!

Not a pretty sight,aye?! Wait till you see the after!



     Pour it into a greased bread mould. Use a 9 x 5 inch pan. 




 Pop it into the oven(preheated) at 180 C for 40 minutes. This timing should do. Don't overcook/overbake(Is that even a word?!) it as the top layer might get charred. If you want you can insert a toothpick in the middle and check if its done. It's supposed to come along with bits n pieces of the cooked bread. If its the raw dough then you'll have to bake it for a few more minutes. Not too much!!!





Then you'll have this delightful little bread waiting to be devoured!! And you my friend, will devour it!!



It might be cracked but that does'nt matter cos you'll be turning it over and the other side will as  soft as a baby's bum!!!




Here's the whole recipe:

Ingredients:
Eggs- 2
Granulated Sugar - 3/4 cup
Coconut oil - 1/3 cup
Yogurt - 1/4 cup
Vanilla Essence - 2 tsp
Cinnamon powder - 2 tsp
Nutmeg powder - 2 tsp
Flour - 1 cup
Baking powder- 1/4 tsp
Baking soda - 1/4 tsp
Salt - a pinch
Grated apple - 3/4 cup
Grated carrots - 3/4 cups

Procedure :
1. Mix Eggs, Granulated Sugar, Coconut oil, Yogurt, Vanilla Essence, Cinnamon powder and Nutmeg powder slowly one by one.
2. To this add the flour, baking powder, baking soda and salt and mix until well combined.
3. Take the grated apple and fold it into this mixture along with the grated carrots.
4. Bake it at 180 C for 40 mintues.


You can have it along with butter. I made the mistake of having it with honey butter and i hated myself for that.

P.S- We ate all the bread and mommy did'nt have anything to give her friend!! i might do it again n send it!! On the positive side my dad sneaked in a few slices for his friend in his office!!
